The steers arrive from our partnering farms to finish out their last few months on our rich spring grass. It’s true that the best tasting beef is marbled with fat. But what the USDA won’t tell you is that naturally grazing animals get fat off grass in the spring. The sugars in the grass build up incredible (and healthy) Omega 3 fats in the beef. When we go to slaughter in June, the animals are more than marbled and the beef tastes incredible!!!
